Try this for dessert: Chocolate Chip Cookie Pie with Graham Cracker Crust, yummy!

Every week I assign my 10 year old stepson a bible verse to memorize.
As a reward he gets to ask for a treat of his choice (sweet tooth like his dad)!
Recently he asked for my famous (well in this house anyway) Chocolate Chip Cookie Pie, with Graham Cracker Crust.
We had it the other night after dinner, and he’s already asking for it again! It’s really delicious, if I may say so myself…naturally I thought I’d share it with you (and you don’t even have to ‘earn’ it)!
Here’s the recipe!
Preheat the oven to 325°
Ingredients:
Crust:
9″ Pie tin
2 packages of graham crackers (about 1/2 of a typical box)
1/4 cup of butter (melted)
Filling:
2 large eggs
1/2 cup all-purpose flour
3/4 cup white sugar
3/4 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup semi-sweet chocolate chips
1. Grind the crackers up in a food processor.
2. Add the melted butter.
3. Press into the pie tin.
Bake at 325 for about 20 minutes.
Remove from the oven and let it cool down a bit.
While the crust is in the oven:
Beat the eggs in a mixer on high speed until foamy.
Beat in the flour, and sugars.
Add the butter.
Stir in the chocolate chips with a wooden spoon.
Spoon the mixture into the pie tin.

Bake for about an hour.
Let it cool completely before you slice it up…

I like it best after it’s cooled in the fridge overnight..but if you can’t wait that long (wink!) you can serve it warm and even add a scoop of vanilla ice cream on top!

Ingredients
- 2 packages of graham crackers, 2/3 of a full box
- 1/4 cup of butter (melted)
- 2 large eggs
- 1/2 cup all-purpose flour
- 3/4 cup white sugar
- 3/4 cup packed brown sugar
- 3/4 cup butter, softened
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 325.
- For the crust:
- Grind the crackers up in a food processor, add the melted butter and press into a 9" pie pan. Bake at 325 for about 20 minutes.
- While the crust is in the oven:
- Beat the eggs in a mixer on high speed until foamy, then beat in the flour, sugars and butter.
- Stir in the chocolate chips with a wooden spoon and pour the mixture into the prepared pie pan.
- Bake at 325 for 60 minutes. Cool before serving.

Hey I really like this cookie pie and I’m going to make it. Could you tell me how many grams are the graham crackers? I can’t get graham crackers here so I’m replacing them with digestives, and all the packets have different sizes… so i couldn’t be sure… Thanks lots for the great looking recipe! C:

That’s a great question! I honestly don’t know, I used a standard package of graham crackers sold here in the states.

This was yummy. Added pecans to it but baked for an hour at 325 & it was not quite set in the middle. Baked another 20 minutes at 350 to set it. :)
