Spring Break is here! You know what that means? Just about a month before official bathing suit season starts….are you ready? I’ve been working on it, but I’ll admit, I’m not quite there yet.
I’ve been doing it the old fashioned way..cutting calories and working out. Still on occasion, I need something sweet, so I find myself trying to come up with ways to have my cake and eat it too (pun totally intended!).
I don’t have a ton of extra time to bake these days, so over the weekend I came up with an ultra easy batch of Orange Creamsicle Cupcakes made with Sunkist TEN Orange Soda. It helps keep the calorie count low, but not sacrificing the taste.
Directions:
Preheat your oven according to the directions on the cake mix box.
Combine the cake mix, orange soda, and vanilla and mix it for about 2 minutes in an electric mixer.
Scoop about 2 spoonfuls of the mixture into each liner in a cupcake pan. You’ll notice the mixture is nice and thick.
Bake it in the oven according to the directions on the box, usually about 20 minutes or so.
Remove the cupcakes from the oven, and let cool completely.
By now your kitchen smells DELICIOUS!
Using a small knife cut around the top of the cupcake, and with an ice cream scoop (or large spoon) scoop them out. The kids will love to help you ‘get rid of’ those cupcake tops :)
Add a small scoop of the vanilla ice cream onto the cupcakes, and enjoy!
When you skip the eggs and oil, you drastically reduce the calorie and fat count! Not to mention, can this recipe get any easier? You really can have your cupcake and eat it too!
The cupcakes turned out superb! Even my husband who is very anti ‘diet’ anything approved!
