I love pasta! It’s a recipe staple that goes with so many dishes, and not just Italian meals.
As a Cuban-American I grew up with many amazing recipes, one of my absolute favorites is our version of Chicken Parmesan, “Pollo a la Milanesa”. While this is a dish that is common among all of Latin America, Cubans usually add ham and serve it over rice, along with other tropical go-to side dishes like fried plantains.
I decided to give it an American twist by making it over angel hair pasta, and did I score big! It is definitely good enough to rival my Grandma’s, and my all-American husband gave it the seal of approval, with both cheeks full.
Chicken Parm – Cuban Style
(Pollo a la Milanesa)
It’s important to make the pasta sauce from scratch for this recipe. I know it’s a little extra work, but honestly in order to keep it authentic to the Cuban tradition, you cannot use store bought Italian pasta sauce. Don’t fret though, I’ve got you covered!

In the meantime, dip each chicken breast into the egg mixture, remove, and sprinkle each side with salt and pepper. Place breadcrumbs into a shallow plate, dip each chicken breast into the breadcrumbs, making sure to cover both sides really well.
