My son’s teacher is the sweetest thing you’ll ever meet, and I’m not even kidding.
This lovely lady calls me (like actually using her voice, on the phone) to tell me that my son did a good job on a certain day.
Sometimes she attends some student’s weekend games, and other times she will greet me with a warm hug when we cross paths in the halls at school. She is just a bundle of sugary sweetness and my son loves her so much! We are so lucky to have her.
This is conference week at my son’s school which means the Room Parents are each assigned a day of the week to take a batch of baked goods to the Teacher’s lounge.
The teachers are working hard to get all the parent conferences in while still teaching our kiddos all week so a yummy treat waiting for them in their lounge is a nice way to thank them for their hard work.
My day was yesterday, so I was so excited to drop off these Caramel Pumpkin Mini Cheesecakes early in the morning. With Thanksgiving next week, I thought they’d appreciate getting a head start on their pumpkin treat consumption!
I had the hardest time keeping little hands off of them at home, but alas, they survived!
I made them with a secret ingredient not usually found in traditional cheesecake. It’s actually a new twist to something most of us grew up with. It’s Eagle Brand Caramel Sweetened Condensed Milk, and it added to its creamy texture. Unlike traditional sweetened condensed milk, the caramel variety gave the mini cheesecakes a lovely hint of caramel in each bite.
Mmmm! It was great to not have make caramel from scratch, just open up a can, and add to any recipe.
By the way, there are 2 varieties of Eagle Brand Sweetened Condensed Milk, caramel and chocolate.
Now instead of melting, chopping, or mixing your chocolate over a double boiler, you just can add Eagle Brand Chocolate Flavored Sweetened Condensed Milk to your chocolate recipes. Same for the caramel flavor, saving so much time!

Most of us grew up with Eagle Brand. My Grandma had an open can in the fridge almost always, she loved to bake.
If you aren’t familiar with it though, Eagle Brand® Sweetened Condensed Milk is a special blend of milk and sugar that has been dissolved using their proprietary vacuum process to create a foolproof “base” for a variety of desserts.
I love that most of their recipes don’t require additional sugar, because of the sugar already present in the milk.
This is the part I didn’t know- when combined with acidic fruit juice, like say, lemon juice, Eagle Brand Sweetened Condensed Milk thickens—without heating—to form velvety pie fillings, puddings and other desserts.
Make sure you follow the rest of your recipe directions to the tee-but don’t be afraid to get creative. It’ll add a sweetened creamy texture to most desserts, like it did with this pumpkin cheesecake recipe!
When I walked into the Teacher’s Lounge to drop these off it was as if Willy Wonka had beat me to it. Holy desserts Batman, there were so many treats there, the teacher’s are going to be so excited!
