I’m sort of on a health kick these days; trying to eat healthier and be more active. My family loves desserts though so I’ve been trying to find ways to tweak their favorite treats, so that they’re nutritious and delicious.
I’ve been substituing high fat and sugar ingredients with better for you alternatives, as well as sneaking fiber in any way I can. Just this weekend I whipped up a batch of Rice Pudding, and substituted the white steamed rice for nutritious brown rice. It tastes just as good as the original, and I can feel better for taking care of my family’s health! Because I’m a working mom convenience is key, so for this recipe I used Minute Rice, and it was ready to go in no time!
{Easy} Delicious Brown Rice Pudding
Make your own batch of this delightful treat tonight:
Ingredients:
2 Eggs
2 cups of steamed brown rice (Minute Rice)
1/2 cup of sugar (or substitute)
1/2 teaspoon of salt
2 1/4 cups of non-fat milk
1 teaspoon of vanilla
1 dash of nutmeg
Cinnamon (optional)
Directions:
Pre-heat the oven to 350.
Prepare the Minute Rice according to the directions on the package. While that is cooking, separate the eggs, and beat the yolks. Beat the egg whites stiffly.Add the yolks to the sugar (or substitute), salt, milk, vanilla, and rice. Fold the egg whites into the mixture. Pour the mixture into a baking dish and sprinkle the nutmeg on top. Bake for 45 minutes.
Remove it from the oven and let it cool off. Sprinkle cinammon on top (optional), and enjoy!
I prefer my brown rice pudding cold, so I like to let it set in the fridge overnight and enjoy it the next day. Brown Rice Pudding Made with Minute Rice
