Our kid’s baseball season has started back up which means practically each weeknight is consumed with practice or games.
When you work full time it can be downright ridiculous to try to get a healthy meal on the table and get everyone dressed and on the field by 5 p.m!
Make-ahead casseroles have always been a great way for me to get a nutritious homemade dinner in their tummies and get out the door on time.
LIGHT CHEESEBURGER POTATO CASSEROLE
Directions:
Preheat the oven to 350º. In a shallow pan brown the turkey meat along with the onions and green pepper. Add the tomatoes and ketchup, stir well. Sprinkle the cumin and salt and pepper liberally.
In a separate bowl, combine sour cream and egg whites, top with salt and pepper, mix well.
Assemble the casserole: Place frozen hash browns in a casserole dish, making sure to break them down into an even layer. Add a layer of the meat, followed by the cream mixture, then sprinkle with cheese.
Bake for 30 minutes. Makes 9 servings.

This Light Cheeseburger Potato Casserole isn’t only delicious, but it’s a fabulous low calorie option as well. I’d call that a WIN!
