There is no better way to celebrate a holiday than with tasty treats, especially a decadent cake. In fact for Mother’s Day I am making easy to bake cakelettes. If you’re not familiar with cakelettes, essentially they are mini cakes. Bigger than a cup cake but smaller than a traditional cake. The perfect size for one person, or to share among a small group. The best part about the cakelettes I’m making for Mother’s Day is that they are semi-homemade, cause you know, that’s how I roll. This one was made with the Cake Boss line of products from Michaels. Super easy! I used the Cake Boss Cakelette pan, icing spatula, decorating turntable, cake mix, frosting, and pre-made fondant, and fondant decorating tool.
The Cake Boss Cakelette pan is an absolute must to make the perfect cakelette. It’s sturdy and the tiered levels make it so easy.
The cakes slipped out easily without any greasing or spraying. That was a big plus for me–less time buttering and dusting with flour!
After the cakelettes cooled off, I cut off the ‘muffin tops’ using a serrated knife, and set them aside. I was careless and turned around for about a minute and came back to find them all gone along with half a can of frosting. There must be a cake thief or 2 living among us.
My absolute favorite tool was the Cake Boss Decorating Turntable and stand. Where has this been all my life? It made the frosting process so simple! Just place the cakelette cut side down on the turntable, add frosting to the spatula, place it against the cake, and spin. VERY FUN! The cake was frosted in no time. I now want to frost a cake every single day.
I am NOT a cake decorator, I’d say I’m a novice at best. Luckily though, I like my cakes with simple decorations, so the Cake Boss pre-made fondant was perfect for me. I spread a little confectioner’s sugar on a cutting board and rolled it out like I would cookie dough. The tool made it easy to cut perfect strips to wrap around the cake tiers. I used a damp paper towel to gently wipe the excess sugar off of the fondant strips.
I topped the cakelette with fresh delicious blueberries. I think the blue compliments the yellow beautifully, after all it’s Mother’s Day, and Mom’s like pretty things!
The cakelette can be sliced like a traditional cake. The smaller slices make it ideal to share with others, or you can keep it for yourself. Mmmm!

In case you were wondering how the cake turned out; the Cake Boss cake mix is super moist and delicious! I kid you not, it’s my new go-to cake mix. The ‘divine white’ frosting tastes almost like fondant. It’s hard to believe that the cakelette was made with cake mix and pre-made frosting.
