Tis the season for entertaining! I love this time of year!
So many parties to go to, and so many to plan for. Are you having a Christmas party and want something easy to impress your guests? Even if you aren’t technically throwing a party there is a good chance that you will have to make a platter of something or another.
This year for our Christmas festivities, I’m whipping up a delicious appetizer, Bacon Stuffed Tomatoes. I made a sample batch this week, so simple to make, and so very tasty!
And guess what? They are low carb! Even those of your friends that are watching their holiday weight will be able to enjoy these.
These bite-sized hors d’ oeuvres went fast at my house! My husband ate just about every single one, I think I was able to sample 2! I can’t wait to share them at my sister in-law’s house this Christmas holiday.
Start with fresh cherry tomatoes, pick up a whole pint at Walmart.
Make sure you use a top quality meat for this recipe! I bought Wright® Brand Hickory Smoked Bacon, and Jimmy Dean® Premium Pork Sausage. Ultimately, I went with the bacon because, well….it’s BACON! Bacon will win out every time, it just makes everything better! I am very pleased with my choice, thank you very much.
The onions were a last minute addition, but I thought they would add a subtle sweetness, especially sauteed in the bacon fat. Aaawww yeah!
I could seriously have a whole platter of these without any assistance whatsoever. They are so pretty and they look so festive! These Bacon Stuffed Tomatoes will look beautiful on a Christmas or New Year’s Eve party table.
Walmart is my go-to spot for this appetizer! Find Wright® Brand Hickory Smoked, and Jimmy Dean® Premium Pork Sausage in the refrigerated foods section, right next to the eggs!

Bacon Stuffed Cherry Tomatoes

Bacon stuffed cherry tomatoes appetizer
Ingredients
- 1 pint cherry tomatoes
- 5 slices of cooked Wright® Brand Hickory Smoked Bacon, finely chopped
- 1/4 onion diced and grilled
- 1/4 cup of parsley, preferred fresh
- 1/3 cup finely shredded parmesan cheese
- 1/3 cup mayonnaise
- Salt and pepper to taste
Instructions
- Cut a small circle around the top of each tomato. Use a melon-baller, scoop out the seeds until it's hollow. Set tomatoes upside down on a paper towel to drain for several minutes.
- In a small bowl fold together the bacon, onions, cheese, parsley, and mayonnaise. Add salt and pepper to taste.
- Cut the rounded edge of each tomato down by a sliver, so that there is a flat end for the tomatoes to stand.
- Use a small spoon or the melon-baller to fill each tomato with the bacon mixture. Refrigerate for at least 45 minutes before serving.
