Warm weather is right around the corner. Seriously where has the time gone? Another summer is upon us and I just know that this is going to be the BEST summer yet!
No really, it is! See, not only did both my boys make their baseball All-Star teams, but, and this is a biggie…we are having a pool built in our yard!
We are ridiculously excited at the prospect of having a pool for all the summer parties!
Let’s face it, with the kids having to go all over town for baseball this summer and no breaks, we won’t have the opportunity to get out of the city. Instead, we’ll will be enjoying lots of ‘staycation’ style parties in our yard.
With all the summer partying we plan on doing I’m brainstorming new and easy recipes to enjoy poolside!
Today I’m sharing an easy to put together food idea, Triscuit mini pizzas. We already love any recipe made with my kitchenaid pizza dough (including these cheese pinwheels), and I knew that something even easier and faster would be a hit!
I initially said these little mini pizza bites appetizer were easy to put together in the summer, but that’s silly. They’re easy to put together any time of year.
How to make Triscuit pizzas – quick instructions
To make sure you have everything you need, I’m going to run through a quick list of the ingredients with some brief instructions.
You’ll find all the details for this Triscuit pizza recipe in a printable recipe card at the end of the post.
Ingredients
Triscuit crackers – I use the whole box, but the recipe card at the end has specific instructions for 24 crackers.
- Pizza sauce or spaghetti sauce
- Shredded mozzarella cheese
- Pepperoni
- Fresh basil (optional)
Instructions
- Preheat your oven and spread the triscuits on a cookie sheet.
- Add a layer of sauce to each cracker, then a sprinkle of cheese and some pepperoni.
- Bake until melty and toasty.
Optional ideas: skip the pepperoni and top the baked snack with chopped basil for a Triscuit tomato basil pizza. You can also make this Italian pink sauce instead of using spaghetti sauce.
One thing to remember about this recipe is that the baked crackers should be served while they’re still warm. The’ll get soggy if they sit too long.
Honestly, soggy pizza isn’t considered a problem in my house. My boys (including my husband!) don’t seem to care.
Notes on Triscuit pizza ingredients
Triscuit crackers
You can use any variety of Triscuit crackers that you like. The trusty Original flavor always works, and the Rosemary and Olive Oil variety is outstanding when topped with sauce and cheese. I don’t know if there’s a kind of cracker that wouldn’t work for this Triscuit recipe.
Cheese
Mozzarella is the standby when it comes to a favorite cheese for pizza, but you can use others in a pinch. Provolone and muenster are easy shredded cheese substitutes that most people won’t even notice when combined with sauce.
Shredded parmesan is a delicious and more gourmet option for cheese, and cojack can be used in a pinch. Really, as long as you like the kind of cheese that’s available to use, it’s going to be tasty when melted onto a Triscuit cracker with some sauce and toppings.
Toppings for Triscuit pizzas
As you can see from the pictures, I’ve made this recipe more than once. The first time I chopped up turkey pepperoni for our topping. The second time I used small pepperoni rounds.
To be honest, I could have made these little snacks with just sauce and cheese – I’m positive my family still would have eaten all of them!
You can use any toppings that you would usually put on a pizza, just use a light hand when putting them on top of the sauce and cheese. 1/2 or 3/4 cup of any topping is the right amount to make an entire box of Triscuits into little pizzas.
Oh, and also don’t use any fresh vegetable that holds a lot of water, like tomatoes. The crackers will get soggy if you’re not careful with this.
Triscuit pizza topping ideas
Here are a few ideas for toppings to get you started:
- Sausage
- Pepperoni
- Cooked mushrooms
- Sauteed onions
- Bacon bits
- green peppers
- Red peppers
- Black olives
- Chicken
I think you could throw just about any leftover meat on there. It’s a fun way to use up what’s in your refrigerator!
They are as tasty as they look, my friends! Pizza is loved by all, so a finger snack that adds a big, satisfying crunch to the traditional taste is sure to be a hit. I made a small batch for the family and everyone loved them!
In a “let’s embarrass mom” moment, the kids realized they could fit the entire mini pizza in their mouths if they tried hard enough, so they were gone faster than I thought. Thankfully, they’re so easy I was able to put together a second round in just a few minutes.
They were gone before I even noticed. Note to self: at parties, leave the oven on, I’ll need to keep ’em coming!
Triscuit Pizza
Easy and healthy Triscuit pizza is a cheesy, tasty snack with a big crunch! Perfect for family lunch, these mini pizzas are easy to make, big on flavor!
Ingredients
- 24 Triscuit Crackers
- 1/2 cup pizza sauce
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup pepperoni
Instructions
- Preheat oven to 350 degrees and line a sheet pan with aluminium foil.
- Spread the triscuit crackers onto the sheet pan, and layer pizza sauce, cheese and pepperoni on top of each cracker.
- Bake for 10-12 minutes, or until cheese is melted. Serve immediately.
Notes
Spaghetti sauce is a great substitute for pizza sauce.
My sheet pans are really big, so I usually just make the entire box of Triscuits into mini triscuit cracker pizzas. Everyone loves them so I know they'll get eaten!
