On cooler days like these I like to cozy up to warm snuggles, warm blankets, and warm delicious hot meals. My easy Light Turkey Chili isn’t only perfect for a cold winter day, but it’s also easy to make in about 30 minutes, and packed with fiber, it’s good for you too! Did I mention it’s only 6 Weight Watchers Points* per serving? You can have your chili, and eat it too!
Light Turkey Chili
- 20 oz. Lean Ground Turkey (85/15)
- 2 cans Chili Beans (14 oz.)
- 2 cans Red Beans (14 oz.)
- 2 cans Kidney Beans (14 oz.)
- 2 cans Black Beans (14 oz.)
- 1 packet Lawry's Fajita Seasoning
- 1 Medium Green Pepper (Diced)
- 4 cloves Garlic (Diced)
- 1 can Tomato paste (small)
- 2 tablespoons Cumin (or to taste)
- Salt & Pepper (to taste)
- 1/2 teaspoon Cayenne Pepper (or to taste)
|Add cooking spray to a pan, and warm green pepper and garlic for about 30 seconds, stirring constantly. Add the meat and season with salt and pepper, stirring until completely brown.|
|In the meantime, in a large sauce pan on medium heat, stir in all of the beans, fajita mix, tomato paste and additional seasonings until combined; about 10 minutes or until the meat is browned.|
|Add the fully cooked meat to the bean mixture, and simmer on low for another 10-15 minutes continuing to stir.|
|Season with salt and pepper, and more of the additional seasonings to taste. Sprinkle shredded cheddar cheese over the top if desired, serve warm.|
