Peppermint Waffle Hors D’Oeuvres
Ingredients:
1 batch of waffles, already cooked.
1 13 oz jar ofmarshmallow cream
1 8 oz. package cream cheese
2 tablespoons powdered sugar
2 peppermint candy canes, crushed
Directions
Make a marshmallow and cream cheese filling:
Blend the marshmallow cream and cream cheese well. I used a stand mixer at full speed for about a minute.
Useful tip: Save some of the marshmallow cream cheese filling and add to a fruit platter as a dip!
Assemble your peppermint waffle hors d’oeuvres by spreading the marshmallow filling on each waffle and putting two together like a sandwich. Cut each sandwich in to 4 bite size pieces.
Next ‘grate’ the candy canes. Please do NOT put them in your food processor. They can easily get stuck in the blades and ruin your machine. To crush them simply place a couple of unwrapped candy canes in 2 sandwich bags, and let all of your anger out. I mean, use a meat tenderizer, or just slam the bag on the counter a few times like I did. :)
Lastly, sprinkle the powdered sugar and candy cane ‘dust’ over your mini sandwiches.
To top it off, and add a small piece of the candy cane on top, ‘gluing’ it on with a little bit of marshmallow filling.
Refrigerate to set.
You can add more candy cane pieces to your platter to decorate. Your guests can munch on the mini sandwiches, and then suck on the candy canes as they sip their Christmas egg nog!
