Eating healthy isn’t the easiest thing to do, even with the best of intentions. Between juggling a job, being a wife, mothering, and let’s not forget managing homework and extra curriculars, oftentimes, I don’t have time to eat at all! This is my fave snack for when I am sitting in traffic. Skinny Mozzarella Sticks Recipe

If you have a little time to spare, use Weight Watchers Light Mozzarella String Cheese to make Skinny Mozzarella Sticks! This recipe for homemade Skinny Mozzarella Sticks isn’t just easy to make, but a deliciously healthy alternative to traditional fried cheese sticks. You’ll never guess that they’re baked!  I can’t wait to whip up a few batches of these for the big game next month!

Skinny Mozzarella Sticks

Skinny Mozzarella Sticks

Ingredients

12 pieces of Weight Watchers Light Mozzarella String Cheese

1 large egg, beaten

2 tbsp oats (run 1/4 cup of oats through the food processor until a flour-like consistency)

5-6 tbsp bread crumbs

5-6 tbsp panko crumbs

2 tsp parmesan cheese

1 tbsp dried parsley

1 tbsp dried oregano

cooking spray (olive oil is ideal, but regular is fine) 

Instructions

Cut cheese in half (now you have 24 pieces) and place them in the freezer until frozen.

Whisk the egg in a small bowl. Set oats aside in a small bowl.  In a separate bowl combine the bread crumbs, panko, parmesan, dried parsley, and oregano.

Dip the frozen sticks in the bread crumb mixture, then into the egg, then dip into the oats for a final coat.

Once all sticks are coated, place them on a layer of wax paper on a cookie sheet or tray. Place the them back into the freezer for at least 1 hour.

Preheat the oven to 400° F. Line a clean cookie sheet with foil and spray lightly with cooking spray.

Set the frozen cheese sticks on the sheet. Spray the tops of the mozzarella sticks with a little more oil and bake for 5 minutes. Turn them over, and bake an additional 5 minutes.  Makes 24 mozzarella sticks.
