Pizza is probably the favorite meals in my home. The kids love it, we love it, and heck even the dog likes it if we throw her a pizza scrap or two. We order in, bake it from the freezer, or sometimes even make it from scratch. Now that the kids are back to school, I thought making a fun pizza treat that they can grab from the fridge and pop in the microwave on their own would be ideal. These pizza cupcakes are not only supremely easy to make (pun intended), but also tasty and depending on what you put in them, they can be nutritious too!
1 package of sliced pepperoni (I used turkey)
3/4 cup of pizza sauce (or pasta sauce)
2 cups of fresh mozzarella cheese
1/2 cup of each of your favorite toppings, i.e., olives, sliced peppers, onions, etc.
1 8 oz. tube of pastry sheet (i.e., crescent roll type pastry)
Preheat oven to 375º. Grease 2 cupcake tins (12 cups in each), set aside. Also set aside 1 pepperoni slice for each cup (about 24). Dice the remaining pepperonis and toppings. In a bowl fold together the cheese, sauce, and toppings, and set aside.
Roll out the dough and cut into 48 triangles. Place 2 triangles into each cup, allowing for them to 'spill out' of the cups a bit. Fill each cup about 2/3 of the way with the mixture, and top each one with a slice of pepperoni (go ahead and add another if you are so inclined).
Bake for 12-14 minutes or until cheese is fully melted, and dough is crispy.
Eat these straight from the oven for a flaky, delicious take on pizza. If you must refrigerate for later like I do, place them in a plastic storage bag in the fridge, and if possible toast in the oven for the best consistency. However if you or your kids need to microwave them in a pinch, then go for it! The pizza cupcakes will be just as good, you really can’t mess them up!
How great are these for football parties? Store them in the freezer and whip them out when your kids bring their friends home from school, ahem, unexpectedly.
I think I can even make them for my kid’s party, adults and children will love them. Pizza is my family’s go-to dish, and these Pizza Cupcakes were a huge hit!
