This time of year there is no shortage of fresh fish and seafood on American dinner tables. My family loves salmon in particular, from grilled to oven baked, to deep fried, anytime is a good time for fresh salmon.
Reminiscent of another family fave, chicken fingers, I made Crispy Salmon Strips and topped them off with a Creamy Chipotle sauce made with peppers. They were a hit with my family; even the littlest one of our troop complimented my dish!
I love La Morena because it’s an authentic Mexican food brand that offers a genuine taste of Mexico into my everyday cooking. Although I’m not Mexican, its influence is all around me here in California!
It reminds me of my friend’s grandma and her home cooking. When we were kids she always had some elaborate Mexican dish on the stove ready after school. Her home smelled wonderful!
Something about that is comforting for me; good food with good company. That’s exactly what I’m trying to replicate in my home.
Crispy Salmon Strips with Creamy Chipotle Sauce
Directions:
Preheat the oven to 400º.
Add olive oil to a shallow pan. Mix parsley, garlic salt, and Panko in the pan and warm until toasted.
Apply salt and pepper liberally to the salmon strips.
Dredge: Place egg, flour, and Panko mixture into 3 separate shallow bowls. Dip each strip into each of the 3 ingredients until fully covered.
Apply cooking spray to a cookie sheet and place each breaded strip in a single layer, heat in the oven for 25-30 minutes.
In the meantime make the Creamy Chipotle Sauce:
Blend all ingredients in a food processor until creamy, drizzle over the cooked salmon.
Garnish with sliced jalapeño peppers (I sliced mine in half) and devour. My son already asked me to save some leftovers for tomorrow night’s dinner. I believe that is what you call a victory folks!
If you want to try this recipe you’ve got to make sure you’re using authentic ingredients! Start with fresh salmon.
I told you how Mexican dishes influenced my growing up. Leave me a comment and let me know what dishes trigger your childhood memories!
