My husband just came up with the most delicious recipe! Although I do cook, he does most of the every day cooking, so I asked him to make me a stuffed pepper, and he whipped up a Spicy Ground Turkey & Quinoa Stuffed Pepper from scratch!
Um yeah he’s a keeper! He started with Quinoa and started to add a little of this and a little of that, and before you know a masterpiece was born!
Just 4 Weight Watchers Points Per Serving!
BEST PART OF IT ALL: The recipe is also healthy! With low fat ground turkey, hearty Quinoa, and vegetables, it’s a win-win!

For this recipe you need a ripe green pepper. We have been growing green peppers in our garden over the last couple of years. They are so fresh and delicious! Just look at how vibrant that shade of green is!
If you don’t grow your own, of course you can find good green peppers at your local grocery store too!
Slice your pepper in half and stuff it with this mixture:
Top the stuffed pepper with the shredded cheddar cheese and bake it in the oven at 350° for 30 minutes.
*Serving is 1/2 cup. Recipe makes 10 cups, so you can refrigerate it for later!
You can make a whole tray of stuffed peppers, or enjoy the Spicy Ground Turkey Quinoa in other ways such as for lettuce wraps or to scoop it up with tortilla chips!
