I’ve always found that using my slow cooker saves me a ton of time and solves the ‘what are we eating?’ dilemma. Breakfast is no exception, so I made my version of a Slow Cooker Apple Coffee Cake! Did you know you can ‘bake’ in a slow cooker?
So easy to serve up a quick slice of homemade goodness in the morning with a side of milk or juice.
Your kids can even grab a slice on their way out the door. Perfect!
Slow Cooker Apple Coffee Cake
Ingredients:
cooking spray
For the filling:
21 oz. can of apple filling {substitute with any fruit you like}
1 teaspoon of cinnamon
3 tsp. brown sugar
For the batter:
1/2 c. of sour cream
18-20 oz of cake mix (I used 2 Jiffy boxes of ‘apple cinnamon’ muffin mix)
1/2 cup of evaporated milk
2 eggs {beaten}
2 tsp. softened butter
Directions:
Mix all of the filling ingredients together and set aside. Mix the rest of the ingredients together {except the cooking spray}.
Add the cooking spray generously in the slow cooker pot, and add 1/2 of the filling to the bottom of the pot. Add a layer of the batter, followed by another layer of the filling. Continue that pattern until you are out of filling and batter.
Set your slow cooker on high for 2 1/2 hours. Remove the lid, turn the cooker off, and let it cool for about 20 minutes.
Once it’s cool, flip it over onto a platter, and slice it up!
Make this the night before and have the kids pitch in!
Or, if you’re an early riser make it before the kids get up!
Yumm…you can taste the apple filling in every bite!

I’m totally up for anything sweet with my morning coffee. And honestly, I have no idea why I haven’t done slow cooker breakfast in the past. Maybe if I did I could sleep just a little longer LOL!
