Since summer is in full swing (already!) I thought I’d share our friend Chip’s recipe for Watermelon sorbet. Chip is a great friend of our family’s and he makes the most delicious desserts–I just knew I couldn’t go wrong with this quick and easy recipe!
Here’s what you’ll need:
1 1/2 cups of sugar
1 1/2 cups of water
4 pints of diced watermelon (or substitute any fresh fruit you like!)
1 lime- juiced
1/2 cup of light corn syrup
How to make it!
Make a ‘simple syrup’ by bringing the sugar and water to a boil, in a small sauce pan. Allowing the mixture to dissolve without stirring it, as you reduce the heat. This process should take about 3 minutes total. Let it stand to cool completely.
Put the fruit and the lime juice in a processor and puree.
Press the puree through a strainer to remove any seeds
into a large bowl.
When the simple syrup is cooled completely, add it to the bowl
with the corn syrup, and mix well.
Add the mixture to your ice cream/sorbet maker, following the instructions.
You should have a refreshing summer treat ready in 20-30 minutes!
